MikeGrowsGreens at The Optimist
So, it’s June 3rd and it’s been 3 days since my microgreens have been on the menu at The Optimist, which is the coffee shop I work at. There are currently two locations, one in the Oakwood area and one by the Crabtree mall. I’m currently supplying them with basil for the avocado toast and daikon radish for the Chris P Bacon sandwich. Soon we’ll have a salad with sunflower shoots on it. You can add microgreens to any sandwich as well. The beginning stages of starting a business is exciting. Especially doing it around people I care about that are supporting me on my journey.
This month will be a feeling out process of how they sell at both shops and how much I need to provide them with each week. I’m working with what I have at the moment with one rack in my apartment. Eventually I’ll reach out to more restaurants, health food stores, and coffee shops. I’m trying to stay around Raleigh but am open to expanding to some stores around Apex and/or Durham. For now, I’m offering only a couple of varieties but I’m open to growing more. I currently have daikon radish, sunflower, basil, and broccoli seeds. If a client asks for a specialty green, I’ll probably grow it. There are some interesting microgreens like cantaloupe and popcorn shoots.
